Gelato/Ice Cream/Bowl: 100% brick

Soft Serve: 90% brick and 10% water

Milk-shake: 70% brick and 30% water

Granita/Slushie: 50% brick and 50% water

 

Home Machines:

Ninja CREAMi: fill 1 Ninja Tub with 500ml gelato mix and freeze for 24h

Cuisinart Ice Maker ICE100BCU: fill tub with 1lt gelato mix, timer 50-60mins

Cuisinart Soft Serve ICE48U: fill Tub with 1lt gelato mix, freeze for 12 hours

 

Commercial Machines:

Batch freezer: pour 3 gelato mixes into the batch freezer and start production (overrun 30-40%)

Soft Serve machine: 3lt bricks and start production, add 100ml water per 1 lt if you want to reduce the sweetness. Overrun 10-20%

GT Touch machine: 2 bricks and 200ml water use Gelato setting or Cream setting for cream products
